
Caratelli - Vin Santos
Caratelli (Italian for “small wooden kegs”) are small 50-liter barrels used specifically for Vin Santos wine. Vin Santos means “Holy Wine” or “Wine of the Saints” in Italian as it is typically vinified during Easter week and was often served at mass in the 14th century. Our Trebbiano and Malvasia grapes are hand picked during late harvest and then dried in the winery's attic for 2 months before moving to caratelli barrels for 5 years.

The Grape & Vinification
Crafted through traditional methods, Trebbiano and Malvasia grapes are dried in a well-ventilated space for 3 to 4 months, developing botrytis. The wine matures for 4 to 6 years in small, esteemed wooden barrels (Caratelli). Each barrel houses a mix of yeast and bacterium known as “The Mother,” crucial for the fermentation process. The result is an exquisite testament to the mastery of noble rot by transforming ripe grapes into golden, sweet elixirs.

Tasting Notes
Amber honey in colour, it has a warm, intense and persistent scent with notes of dry figs and almond; its flavour is velvety and persistent with a reminder of candy fruits.
Parings
Typically, Vin Satnos it is accompanied by Tuscan biscuits called "cantucci", hard sweets biscuits filled with almonds and commonly known as biscottis. We also love to pair it with dark chocolate or mature cheeses.
